Choosing Your Chicken
We recommend boneless skinless chicken thighs for this recipe because they cook up fast and impeccably juicy every time.
You will need about 1-1/2 lbs boneless thighs cut into 1-in cubes. – make sure to cut the chicken into uniform slices to it cooks evenly.
We have also had success making this recipe with boneless skinless chicken breasts in place of the thighs. The chicken didn’t grill up quite as juicy as the thighs, but it was definitely still delicious.

Tips for Perfect Chicken Souvlaki
- Marinate chicken 2 hours – use 2 hours as your minimum marinade time and feel free to go up to 12 hours if you want to marinate this chicken the night before.
- Prep bowl ingredients while chicken marinates – this will enable you to have everything ready for serving once the chicken is grilled.
- Soak wooden skewers – if using wooden skewers instead of metal, make sure you soak skewers in cold water 10 minutes before skewering meat and vegetables.
- Space meat and vegetables on skewers – in order to evenly cook vegetables and chicken make sure you don’t jam the ingredients too close together on the skewers.
- Grill chicken and vegetables – this adds a perfect wisp of smoky flavor to the chicken and vegetables, plus prevents you from heating up the kitchen.

Skip skewering chicken and vegetables and instead arrange in a single layer on a large sheet pan. Roast chicken and vegetables at 400F 10-15 minutes until chicken registers 165F and vegetables are tender.
Stovetop
Lightly oil a large cast iron or stainless steel skillet. Add chicken and sear on all sides until cooked through. Repeat cooking process with vegetables until tender.

Chicken Souvlaki Marinade
- 1/4 cup freshly-squeezed lemon juice
- 1/4 cup extra-virgin olive oil
- 3 medium cloves garlic, minced

- 1 medium zucchini, cut into 1/4-in thick slices
- 2 medium sweet peppers, cut into 1-in cubes

- 2 cups cherry tomatoes, halved
- 1/2 cup pitted Kalamata olives
- 1/2 cup crumbled feta cheese

Instructions
Chicken Souvlaki Marinade
- In a small bowl, whisk lemon juice, olive oil, garlic, oregano, salt, and pepper together until smooth. Place chicken in a large bowl or resealable bag and pour marinade over top, making sure chicken is evenly submerged.
- Marinate chicken in refrigerator at least 2 hours or up to 12.
Tzatziki Sauce
- In a small bowl, whisk all sauce ingredients until smooth. Season with salt and pepper to taste. Refrigerate until ready to use.
Bowls
- Combine zucchini and sweet peppers in a large bowl and toss with olive oil and season with salt and pepper to taste. Thread vegetables onto skewers.
- Remove chicken from marinade and thread onto skewers, taking care to evenly space chicken chunks out on skewers.
- Heat grill to medium-high heat. Once heated, arrange chicken and vegetable skewers on grill and turn occasionally 8-10 minutes until chicken registers 165F and vegetables are tender.
- Assemble the bowls by dividing hot rice or other grain between 4 serving bowls. Top each bowl with chicken skewers, vegetable skewers, cherry tomatoes, olives, and feta.
- Serve bowls with tzatziki sauce on top along with shredded lettuce, flatbread, and additional fresh herbs if desired. Enjoy!
