Melt sugar in a medium pot over medium heat. Once melted, whisk in butter and heavy cream and simmer until caramel is thickened. Remove from heat and add salt.
Arrange apples in an oven-safe skillet and drizzle caramel over top. Set aside for a moment.
In a medium bowl, combine oats, flour, brown sugar, spices, and melted butter until crumbly.
Sprinkle topping evenly over apples. Bake apple crisp at 350F 30-35 minutes until apples are bubbly and topping is golden brown.
