Crispy Black Bean Tacos

In a food processor, pulse scallions, lime juice, sour cream, garlic, and honey until smooth. Season sauce with salt and pepper to taste.

Make sauce


Use a potato masher or fork to mash black beans until creamy. Fold in chipotle and spices until combined.

Warm corn tortillas and fill with mashed black beans, cheddar, and pepper jack.

Heat vegetable oil in a large skillet over medium-high heat. Working in batches, add tacos and fry 2-4 minutes per side until crispy.
