These tacos are currently one of our dinner go-to’s because they’re just so incredibly simple to pull together and they use basic pantry ingredients you probably have on hand right now.
No need to thaw meat because we’re not using it today and these tacos are seriously so loaded with creamy beans and cheese they don’t need it!

The only way you could possibly go wrong here is if you were to skip the homemade scallion lime sauce. Trust me on this one, it takes 5 minutes to blitz together and it takes these tacos to the next level!

Ingredients You Will Need
- Scallions
- Lime juice
- Garlic
- Sour cream
- Honey
- Black beans
- Chipotle in adobo sauce
- Garlic powder
- Chili powder
- Cumin
- Corn tortillas
- Cheddar cheese
- Pepper jack cheese
- Vegetable oil
Choosing Your Tortillas
This recipe works great with both corn or flour tortillas – you can even use a mix of both for some variety! We do recommend heating tortillas in microwave 30-60 seconds before filling so they don’t break when folded.

Tips for Perfect Crispy Tacos
- Use food processor or blender to puree sauce – we prefer a food processor since we find it efficiently breaks down the green onion, but a blender will work as well.
- Drain and rinse black beans – this will prevent any additional liquid from getting in the filling.
- Mash black beans – use a fork or potato masher to mash the black beans until creamy.
- Fry tacos in batches – be careful not to overcrowd the pan otherwise the tacos will not crisp up properly.
Recipe Variations
Try these ideas for a different twist on these tacos.
- Use a different bean – try pinto, navy, white beans, or chickpeas in place of the black beans.
- Try a different cheese – gouda, mozzarella, Monterey jack, or a sharp cheddar would all be great cheese choices in these tacos.
- Adjust heat level – these tacos have a bit of heat to them from the chipotle, but you can easily dial this up or down based on your heat preference.
- Add vegetables to filling – add sauteed red pepper, mushrooms, or spinach to the bean filling.
- Make it meaty – add browned ground beef or chicken to the bean filling.
Serving Suggestions
These tacos are amazing all on their own with the dipping sauce but also incredible alongside cilantro lime rice, chips and salsa/guacamole, or a big green salad.
To reheat tacos for serving, air fry at 375F 4-6 minutes or lay in a single layer on a sheet pan and bake at 400F 8-10 minutes.

The sky’s pretty much the limit with these killer black bean tacos! You can use our suggested add-ins or just keep it nice and simple with the flavorful black bean + cheese filling. The only thing we recommend is possibly doubling the dipping sauce recipe cause trust me, you want excessive amounts of it.

Crispy Black Bean Tacos with Scallion Lime Sauce

Ingredients
Scallion Lime Sauce
- 1 cup thinly-sliced scallions
- 1/4 cup freshly-squeezed lime juice
- 1 medium clove garlic, minced
- 1/4 cup sour cream
- 1 tablespoon honey or agave nectar
- Salt and pepper to taste
Crispy Black Bean Tacos
- 1 can (15 oz) black beans, drained and rinsed
- 2 tablespoons minced chipotle in adobo sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 8 (6-inch) corn or flour tortillas, warmed
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded pepper jack cheese
- 2-4 tablespoons vegetable oil
- Additional sliced scallion and lime wedges for serving
Instructions
Scallion Lime Sauce
- Place all sauce ingredients in a food processor or blender and process until smooth. Season sauce with salt and pepper to taste and refrigerate until ready to use.
Crispy Black Bean Tacos
- Place black beans in a large bowl and mash well with a potato masher or fork. Fold in chipotle, garlic, chili powder, cumin, and salt and pepper to taste until combined.
- Divide black bean mixture between tortillas and top beans with cheeses. Fold tortillas over to form a taco.
- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Working in batches, add a few tacos to pan and cook 2-4 minutes on each side until tacos are crispy and golden brown. Repeat cooking with remaining tacos, adding additional oil to pan as needed.
- Serve tacos with dipping sauce and additional scallion and lime wedges squeezed over top. Enjoy!

Easy to make. Used low-sodium black beans. One notch higher on the spice level than we normally like, so will halve the minced chipotle next time. Adding to our monthly menu rotation.
