- Egg yolks - Granulated sugar - 2% or skim milk - Cornstarch - Lemon
- Cream cheese - Powdered sugar - Unsalted butter - Vanilla extract
Place egg yolks in a small bowl and lightly beat until smooth.
Combine sugar and milk in a medium saucepan and heat over medium heat until steaming. Slowly add 1 cup warm milk into egg yolks, beating until smooth.
Add egg yolk mixture and cornstarch to pan and cook until thickened, whisking occasionally. Remove from heat and mix in lemon juice, zest, and butter.
Beat cream cheese and butter until creamy. Beat in powdered sugar, vanilla, and milk until frosting is smooth and creamy.
Spoon pudding into serving glasses and chill 2 hours. When ready to serve, spoon cream cheese frosting on top. Enjoy!
