- A perfectly light and crispy texture - Made from leftover mashed potatoes and only a handful of other ingredients - Cooked entirely in the air fryer
- Mashed potatoes - Garlic - Eggs - Cheddar cheese - All-purpose flour
- Nonstick spray - Unsalted butter - Sour cream - Green onions
In a large bowl, combine cold mashed potatoes, garlic, eggs, cheddar, and flour. Fold dough until thick and combined, adding additional flour by the tablespoon if needed.
Drop dough by heaping 1/4 cupfuls into a greased and preheated 4-quart air fryer. Flatten patties slightly and brush with melted butter.
Air fry potato cakes at 400F 8-10 minutes, flipping once halfway through cooking until potato cakes are golden-brown and crispy. Repeat cooking with remaining dough.
Serve potato cakes warm with dollops of sour cream and fresh sliced green onions on top. Enjoy!
