Ingredients

Blueberry Banana Bread

Citrus Glaze

  • 1/2 cup powdered sugar
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lime zest
  • 1-2 tablespoons 2% or skim milk

Instructions

Blueberry Banana Bread

  • Preheat oven to 350F and line a 9x5 loaf pan with parchment paper. Set aside.
  • In a large bowl, whisk mashed bananas, sugar, honey, yogurt, oil, milk, egg, and vanilla extract until smooth.
  • In a separate medium bowl, combine 2 cups flour, baking soda, and salt. Fold flour mixture into liquid until just combined. Toss blueberries in flour bowl with remaining 1 tablespoon flour until coated and fold into batter.
  • Scrape batter into prepared pan and smooth top. Bake banana bread at 350F 50-55 minutes until a toothpick inserted in middle comes out clean. Cool bread completely on a wire cooling rack.

Citrus Glaze

  • In a small bowl, whisk powdered sugar, zests, and just enough milk to achieve a drizzling consistency.
  • Remove bread from pan using parchment paper and transfer to a cutting board. Drizzle bread with glaze and let stand 5 minutes before cutting into slices. Enjoy!

Notes

Storing Instructions
Store banana bread in an airtight container at room temperature up to 3 days. Bread may also be frozen unglazed up to 2 months.
