Stuffed with a creamy broccoli cheddar filling and baked to juicy perfection, this broccoli cheese stuffed chicken is an easy dinner that comes together in minutes!

Ingredients

  • 4 medium boneless skinless chicken breasts (about 1-1/2 lbs)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups finely-chopped fresh broccoli
  • 2 medium cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, minced

Instructions

  • Preheat oven to 400F. Pat chicken breasts dry and cut a slit in each about 2/3 through. Set aside for a moment.
  • In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper. Rub all over the outside of chicken breasts.
  • Heat an oven-safe large skillet over medium-high heat. Add butter and olive oil to pan and swirl to coat bottom. Add chicken to pan and sear 2-3 minutes per side until golden brown. Transfer to a large plate and set aside for a moment.
  • In a medium bowl, combine cream cheese, cheddar, Parmesan, broccoli, and garlic until creamy. Season with salt and pepper to taste.
  • Fill each chicken breast with broccoli cheese mixture using toothpicks to secure if needed. Return chicken to skillet and bake at 400F 10-15 minutes or until chicken registers 165F.
  • Top chicken with fresh parsley and serve immediately while warm. Enjoy!
