Tips for Perfect Stuffed Chicken
- Finely chop the broccoli – you want the broccoli in very fine pieces so it blends evenly into the cream cheese.

Broccoli Cheese Stuffed Chicken

Ingredients
- 4 medium boneless skinless chicken breasts (about 1-1/2 lbs)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cups finely-chopped fresh broccoli
- 2 medium cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons fresh parsley, minced
Instructions
- Preheat oven to 400F. Pat chicken breasts dry and cut a slit in each about 2/3 through. Set aside for a moment.
- In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper. Rub all over the outside of chicken breasts.
- Heat an oven-safe large skillet over medium-high heat. Add butter and olive oil to pan and swirl to coat bottom. Add chicken to pan and sear 2-3 minutes per side until golden brown. Transfer to a large plate and set aside for a moment.
- In a medium bowl, combine cream cheese, cheddar, Parmesan, broccoli, and garlic until creamy. Season with salt and pepper to taste.
- Fill each chicken breast with broccoli cheese mixture using toothpicks to secure if needed. Return chicken to skillet and bake at 400F 10-15 minutes or until chicken registers 165F.
- Top chicken with fresh parsley and serve immediately while warm. Enjoy!
