Ingredients

Cajun Lime Sweet Potato Chips

  • 2 medium sweet potatoes, sliced into 1/4-in thick slices
  • 3 tablespoons lime juice
  • 3 tablespoons olive oil
  • 1 tablespoon Cajun spice seasoning
  • Salt and pepper to taste

Avocado Dip

  • 1 medium avocado, pitted
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 2 tablespoons minced fresh cilantro
  • Salt and pepper to taste

Instructions

Cajun Lime Sweet Potato Chips

  • Preheat oven to 425F In a large bowl, toss sweet potato slices with lime juice, oil, Cajun seasoning, and salt and pepper to taste. Arrange slices in a single layer on a greased baking sheet.
  • Bake sweet potato chips at 425F 20-25 minutes, flipping chips over halfway through baking. Keep warm and set aside for a moment.

Avocado Dip

  • In a food processor, pulse avocado, greek yogurt, lime juice, cilantro, and salt and pepper to taste until completely smooth and creamy. Serve sweet potato chips with avocado dip immediately and enjoy!
