Creamy gingerbread overnight oats are piled high with soft caramelized pears and you'll never want your overnight oats any other way again this winter!

Ingredients

Caramelized Pears

  • 1 tablespoon butter
  • 2 medium pears, peeled, cored, and thinly sliced
  • 2 tablespoons coconut sugar (or brown sugar)
  • 1/2 teaspoon ground cinnamon

Gingerbread Overnight Oats

Caramelized Pears

  • Heat butter in a medium skillet over medium-high heat until melted. Add pears, sugar, and cinnamon to skillet and saute several minutes until pears are softened and caramelized. Let cool then store in refrigerator.

Gingerbread Overnight Oats

  • In a large mason jar, combine oats, milk, yogurt, molasses, sugar, vanilla, and spices. Screw lid on and shake to combine. Let chill in fridge overnight or at least 8 hours.
  • Remove oats from fridge and divide between 3 serving glasses. Top each with remaining caramelized pears. Serve overnight oats immediately and enjoy!
