Creamy gingerbread overnight oats are piled high with soft caramelized pears and you’ll never want your overnight oats any other way again this winter!
Oh hey! I told you winter eats were here to stay awhile. And that definitely doesn’t dis-include gingerbread from making an appearance in our overnight oats.
And c’mon, we gotta fancy this up somehow, so let’s throw some caramelized pears into the party and make breakfast a REAL winter rep.
And please note that when I say fancify, I do NOT mean complicate. Mornings are hard and breakfast should always be on the easy side of things for that reason.
Overnight oats will always be the easiest of the peas-iest breakfast, guys. Quite possibly the best. Period.
You can’t beat this timeline, guys. Check it OUT —> (spoiler, it can all be made ahead, WOOT)
- Overnight oat base. Shake around old-fashioned rolled oats, milk, yogurt, a little molasses, a little sugar, a touch of vanilla, and a whoooooole bunch of gingerbread spices in a mason jar. Pop it in the fridge overnight and let it do its thing (which is pretty much nothing on your part)
- Caaaaaaaraaaaaaamelized pears. It’s butter, sugar, and pears, guys. You can’t go wrong.
Put it all together and whaddya get? It’s just breakfast of pure champs, guys.
The oats seriously get SO creamy! And they’re packed with so much incredible ginger flavor. They’re kinda dreamy with soft, caramelized pears okay?
Get ready for a breakfast streak aaaaaall the way through December, friends. Just embrace it. It’s so good.
Caramelized Pear Gingerbread Overnight Oats

Ingredients
Caramelized Pears
- 1 tablespoon butter
- 2 medium pears, peeled, cored, and thinly sliced
- 2 tablespoons coconut sugar (or brown sugar)
- 1/2 teaspoon ground cinnamon
Gingerbread Overnight Oats
- 1 cup old-fashioned rolled oats
- 1 cup milk
- 1/2 cup greek yogurt
- 3 tablespoons dark molasses
- 1 tablespoon coconut sugar (or brown sugar)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
Instructions
Caramelized Pears
- Heat butter in a medium skillet over medium-high heat until melted. Add pears, sugar, and cinnamon to skillet and saute several minutes until pears are softened and caramelized. Let cool then store in refrigerator.
Gingerbread Overnight Oats
- In a large mason jar, combine oats, milk, yogurt, molasses, sugar, vanilla, and spices. Screw lid on and shake to combine. Let chill in fridge overnight or at least 8 hours.
- Remove oats from fridge and divide between 3 serving glasses. Top each with remaining caramelized pears. Serve overnight oats immediately and enjoy!

This right here is a great recipe, I can’t believe it also so simple. I can see myself only making gingerbread overnight oats in this manner from now on. The flavor and texture was just right. Very clear instructions too, thanks.
