2(4 oz each) packagesplain soft goat cheese, cubed
1/4cupminced fresh basil
Salt and pepper to taste

Instructions
Cook pasta according to package instructions in salted water until al dente. Reserve 1-1/2 cups pasta cooking water and drain pasta. Set aside for a moment.
Heat olive oil in a large skillet over medium-high heat. Add shallot and cherry tomatoes and cook 3-5 minutes until tomatoes are juicy and softened. Fold in garlic, sugar, and goat cheese and stir over medium-high heat until goat cheese begins to melt.
Fold cooked pasta into goat cheese mixture. Fold over medium-high heat 2-3 minutes, adding a few splashes of reserved pasta water as needed until sauce is creamy and clinging to pasta. Fold in basil and season pasta with salt and pepper to taste.
Serve pasta warm with additional basil on top. Enjoy!
