Goat cheese and cherry tomatoes are the almighty sauce duo we’re relying on today and shocker, they do their job pretty flawlessly. We’re talking creamy, tangy, with just a hint of sweetness in the sauce coating tender pasta with little bursts of tomato and basil in every bite.
To absolutely no one’s shock, I typically end up eating the majority of this pasta straight from the pot.

There’s nothing complicated about this pasta, friends. You’ll need two pots, one for boiling the pasta and one for building the sauce, a few simple ingredients, and an extraordinarily big appetite for pasta because this recipe makes a metric ton.
And thank goodness for that.

Tips for Perfect Goat Cheese Pasta
- Cook pasta to al dente – the pasta will continue to cook a bit once added to the sauce so make sure you cook it only to al dente to prevent it from overcooking later.
- Reserve pasta cooking water – a few good splashes of pasta water will help loosen up the goat cheese sauce and make everything super creamy.
- Halve cherry tomatoes – halving the cherry tomatoes helps them break down faster for the sauce.
- Add a pinch of sugar – a little sugar helps balance the acidity from the tomatoes.
- Add fresh basil at end of cooking – a handful of fresh basil at the end adds an incredible herby pop of flavor.

Cherry Tomato Goat Cheese Pasta

Ingredients
- 1 lb dry pasta
- 2 tablespoons extra-virgin olive oil
- 1 small shallot, minced
- 2 cups cherry tomatoes, halved
- 3 medium cloves garlic, minced
- 1 tablespoon granulated sugar
- 2 (4 oz each) packages plain soft goat cheese, cubed
- 1/4 cup minced fresh basil

Instructions
- Cook pasta according to package instructions in salted water until al dente. Reserve 1-1/2 cups pasta cooking water and drain pasta. Set aside for a moment.
- Heat olive oil in a large skillet over medium-high heat. Add shallot and cherry tomatoes and cook 3-5 minutes until tomatoes are juicy and softened. Fold in garlic, sugar, and goat cheese and stir over medium-high heat until goat cheese begins to melt.
- Fold cooked pasta into goat cheese mixture. Fold over medium-high heat 2-3 minutes, adding a few splashes of reserved pasta water as needed until sauce is creamy and clinging to pasta. Fold in basil and season pasta with salt and pepper to taste.
- Serve pasta warm with additional basil on top. Enjoy!
