Make Ahead Instructions

- Form the patties – formed patties store well in refrigerator up to 6 days.
- Make the teriyaki sauce – make the sauce and store in refrigerator up to 6 days.
- Slice the pineapple – core and slice the pineapple rings and store in refrigerator up to 1 week.

Tips for Perfect Chicken Burgers
- Gently knead burger meat – use a light hand when kneading the patty ingredients so as not to overmix the dough and keep the burger juicy once cooked.
- Grill burgers on grill pan or aluminum foil – because there’s not a lot of fat in chicken, the patties tend to stick quite a bit if you grill them directly on the grill grates. Grill the patties on a greased grill pan or a sheet of nonstick aluminum foil to prevent sticking.
- Brush burgers with teriyaki sauce during grilling – reserve half of the sauce for serving with the burgers later and use remaining sauce to brush on patties while they cook.
- Grill pineapple rings – this brings out the sweet pineapple flavor and gives the pineapple a nice char.
- Toast buns – always toast your buns before assembling burgers! Split buns in half and toast them under a broiler for a minute or two or just throw them straight on the grill until a light golden brown.

Don’t have a grill? You can still make this recipe on the stovetop or in the oven instead.
Stovetop: working in batches, heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Once pan is hot, add burger patties and sear 8-10 minutes, brushing with teriyaki sauce and flipping once until burgers register 165F.
Oven: arrange chicken patties in a single layer on a large greased sheet pan. Bake patties at 400F 15-20 minutes until meat registers 165F.

Teriyaki Pineapple Chicken Burgers

Ingredients
Teriyaki Sauce
- 1/3 cup water
- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons grated fresh ginger
- 2 medium cloves garlic, minced
- 1 tablespoon honey
- 1/4 cup light brown sugar
- 1 tablespoon cornstarch, mixed with 1 tablespoon water
Chicken Burgers
- 1 lb ground chicken
- 1/2 cup panko breadcrumbs
- 1 large egg
- 1 medium clove garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 rings fresh pineapple
- 4 burger buns, split and toasted
- Leafy lettuce, tomato slices, and sliced green onion for serving
Instructions
Teriyaki Sauce
- Whisk together all sauce ingredients in a medium pan and set over medium heat. Bring to a low simmer, whisking occasionally until sauce is thickened. Remove from heat and set 1/4 cup sauce aside in a serving bowl for constructing and place the remaining 1/4 cup in a separate bowl to brush on the burgers while they cook.
Chicken Burgers
- In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, salt, and pepper. Very gently knead until just combined. Form mixture into 4 patties.
- Preheat a grill to 375F.* Grill patties either on a greased grill pan or a sheet of nonstick aluminum foil (they tend to stick to the grill grates if you put them on directly) Grill chicken burgers, flipping once until golden-brown and brushing frequently with reserved 1/4 cup teriyaki sauce until meat registers 165F (about 8-10 minutes of cooking) Remove burgers from heat and keep warm.
- Place pineapple rings directly on grill and grill several minutes on each side until slightly charred.
- Place a lettuce leaf on each bottom of toasted buns. Top with burger patties, tomato, grilled pineapple, and green onion. Drizzle burgers with reserved teriyaki sauce. Serve burgers immediately and enjoy!
