These avocado bacon burgers are unbelievably juicy inside and loaded up with crispy bacon, soft mozzarella, and lots of creamy smashed avocado.
Bacon, avocado, and cheese are permanently hired for burger duty in our house this summer. I’m going to have to highly recommend you follow my lead on this one.
We don’t go boring in the burger department around here and today is no different, BUT these burgers are different because they only have a handful of bomb toppings that all work flawlessly well together.
You know it’s a good burger when the minimal toppings taste like a million bucks.
Everything in these burgers is fantastic, but it’s the mashed avocado spread that really takes them to the next level! It’s pretty much just a simple homemade guacamole since it’s composed of avocado, lime, salt, and pepper, but boy does it ever elevate these burgers.

Making the Burgers

Ingredients You Will Need
- Avocados
- Lime juice
- Cilantro
- Chuck ground beef
- Garlic
- Bacon
- Lettuce
- Hamburger buns
- Fresh mozzarella cheese
- Red onion
Choosing Your Beef
I recommend using an 80/20 ground chuck for these burgers. This ratio means 80% lean meat and 20% fat which leads to an incredibly juicy and tender burger.
You can use regular ground beef if that’s all you have on hand, but be aware your burger may not turn out quite as juicy.
Tips for Perfect Burgers
- Don’t overknead meat – handle the beef with care to avoid overmixing and turning it tough.
- Prep all burger toppings before grilling – ideally, you will want all the toppings prepped before you start cooking the burgers. This way once the burgers are off the grill you can assemble and serve them immediately while warm.
- Sear burgers in bacon drippings – if you are not using a grill and will be cooking the burgers indoors, utilize the drippings leftover from the bacon and sear your burgers in the same pan.
- Toast buns – this only takes a moment and instantly elevates any burger!
Recipe Variations
Try these ideas for a different twist on these burgers.
- Add different toppings – try fresh sliced tomatoes, a different kind of cheese, barbecue sauce, or caramelized onions.
- Make them spicy – try folding minced jalapeno or red pepper flakes into avocado spread.
Tempature Cooking Guide
Use this temperature chart to determine when to pull your burgers off the heat for your desired level of doneness. Always use a kitchen thermometer to test the internal temperature.
- Medium-rare – 130-135F
- Medium – 140-145F
- Medium-well – 150-155F
- Well-done – 160-165F.

Avocado Bacon Burgers

Ingredients
- 2 medium avocados, pitted and diced
- 2 tablespoons lime juice
- 1 tablespoon minced cilantro
- Salt and pepper to taste
- 1 lb chuck ground beef
- 2 medium cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 strips bacon
- 4 medium lettuce leaves
- 4 hamburger buns, toasted
- 4 slices fresh mozzarella cheese
- Sliced red onion
Instructions
- Place avocado, lime juice, and cilantro in a small bowl and mash well with a fork until smooth. Season with salt and pepper to taste. Set aside.
- In a medium bowl, combine ground beef, garlic, salt, and pepper. Form meat into 4 uniform patties.
- Place bacon in a large skillet and set over medium heat. Cook bacon until crispy, turning occasionally. Drain bacon on paper towels.
- Preheat a grill to 400F or if cooking indoors, heat pan with bacon drippings over medium-high heat. Grill or pan sear burgers flipping once until burgers reach your desired degree of doneness (see blog post for more info on this)
- Assemble burgers by placing a lettuce leaf on each bun and spreading mashed avocado on top. Top with burger patty, a slice of mozzarella, a strip of bacon, and red onion. Serve burgers warm and enjoy!
