There’s absolutely nothing complex about these sweet potato foils, folks. You’ll only need 8 simple ingredients and a few sheet of foil to pull off this dinner magic.

Ingredients You Will Need
- Dijon mustard
- Stone-ground mustard
- Honey
- Garlic powder
- Apple cider vinegar
- Sweet potatoes
- Sweet onion
- Parsley

Tips for Perfect Grilled Sweet Potatoes
- Cut sweet potatoes in uniform cubes – aim for uniform 1/2-inch cubes so the sweet potatoes cook evenly.
- Double-stack tin foil – double-stacking the tin foil will provide a solid base for the sweet potatoes.
- Wrap sweet potatoes tightly in packets – this will insulate the sweet potatoes and help them cook quickly.
- Grill sweet potatoes at 375F 15-20 minutes – turn the packets occasionally so each side is exposed to the heat.
- Be careful opening foil packets – always use a tongs to open foil packets as there will be a buildup of steam inside.
Recipe Variations
Try these ideas for a different twist on these sweet potatoes.
- Use butternut squash – replace the sweet potatoes with 4 cups diced butternut squash. Be aware that cooking time may vary.
- Add heat – fold 1 teaspoon red pepper flakes or small minced jalapeno pepper into sweet potatoes.

Oven Instructions
This recipe can easily be converted to the oven if you don’t have access to a grill!
Arrange sweet potatoes in a single layer on a large greased sheet pan. Roast at 400F 20-25 minutes until sweet potatoes are tender. Optionally, broil sweet potatoes on high 1-2 minutes to crisp up the exterior.

Honey Mustard Grilled Sweet Potatoes in Foil

Ingredients
- 3 tablespoons Dijon mustard
- 2 tablespoons stone-ground mustard
- 1/3 cup honey
- 1/2 teaspoon garlic powder
- 1 teaspoon apple cider vinegar
- 3 medium sweet potatoes, cut into 1/2-inch cubes
- 1 small sweet onion, finely diced
- Salt and pepper to taste
- 2 tablespoons minced fresh parsley
Instructions
- Cut out 6 large sheets of tin foil. Double-stack foil so you end up with 3 piles and grease foil well. Set aside for a moment.
- In a large bowl, whisk mustards, honey, vinegar, and garlic powder until smooth. Fold sweet potato cubes and sweet onion into honey mustard until evenly coated. Season well with salt and pepper to taste.
- Divide honey mustard sweet potatoes between prepared sheets of foil, placing in the center. Wrap foil tightly around sweet potatoes to seal.
- Preheat grill to 375F. Place foil packets on preheated grill and allow to cook at 375F 15-20 minutes turning packets occasionally until sweet potatoes are tender when pierced with a fork (carefully use a tongs to open a packet to test sweet potatoes)
- Allow packets to cool slightly then use a tongs to open each packet (be careful, steam will escape). Sprinkle sweet potatoes with fresh parsley and season with additional salt and pepper to taste if needed. Serve warm and enjoy!
