Tossed in a homemade honey mustard and grilled to tender, smoky perfection in foil packets, these grilled sweet potatoes in foil are an easy side dish to throw on the grill for any occasion.
Cut out 6 large sheets of tin foil. Double-stack foil so you end up with 3 piles and grease foil well. Set aside for a moment.
In a large bowl, whisk mustards, honey, vinegar, and garlic powder until smooth. Fold sweet potato cubes and sweet onion into honey mustard until evenly coated. Season well with salt and pepper to taste.
Divide honey mustard sweet potatoes between prepared sheets of foil, placing in the center. Wrap foil tightly around sweet potatoes to seal.
Preheat grill to 375F. Place foil packets on preheated grill and allow to cook at 375F 15-20 minutes turning packets occasionally until sweet potatoes are tender when pierced with a fork (carefully use a tongs to open a packet to test sweet potatoes)
Allow packets to cool slightly then use a tongs to open each packet (be careful, steam will escape). Sprinkle sweet potatoes with fresh parsley and season with additional salt and pepper to taste if needed. Serve warm and enjoy!
