Chocolate Covered Strawberry Popsicles

These chocolate covered strawberry popsicles feature a rich chocolate shell coating fresh strawberry popsicles. Only 7 simple ingredients needed!

Ingredients

  • 2 cups diced fresh strawberries
  • 1/4 cup honey or agave nectar
  • 1 tablespoon lemon juice
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark or semisweet chocolate chips
  • 1 tablespoon coconut oil
  • Crushed freeze-dried strawberries for garnish, optional

Instructions

  • In a blender or food processor, blend strawberries, honey, lemon juice, Greek yogurt, and vanilla until smooth, scraping down sides as necessary.
  • Pour strawberry mixture into popsicle molds and freeze 4 hours or overnight until popsicles are solid.
  • Place chocolate chips and coconut oil in a microwave-safe bowl. Microwave 1 minute on high, stirring at 15-second intervals until chocolate is smooth and melted.
  • Line a sheet pan with parchment paper. Remove popsicles from their molds and dip in melted chocolate mixture. Place popsicles in a single layer on sheet pan and immediately sprinkle with crushed freeze-dried strawberries if desired. Freeze popsicles 10 minutes until chocolate coating is firm. Store popsicles in freezer until ready to serve. Enjoy!
