Oatmeal

Cinnamon Swirl and Cream Cheese Glaze

  • 1-1/2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 to 1 tablespoon 2% or skim milk
  • Toasted chopped pecans for topping

Instructions

Oatmeal

  • In a medium saucepan over medium-high heat, bring water and milk to a simmer. Stir in oats, reduce heat to low, and allow to cook over low 6-8 minutes, stirring frequently until oatmeal is soft and creamy. Remove from heat and stir in a pinch of salt. Keep oatmeal warm.

Cinnamon Swirl and Cream Cheese Glaze

  • In a small bowl, whisk melted butter, sugar, and cinnamon until smooth. Set aside for a moment.
  • In a separate small bowl, combine cream cheese and powdered sugar until smooth and creamy. Fold in vanilla and just enough milk to achieve drizzling consistency.
  • Divide oatmeal between two bowls and spoon or pipe cinnamon sugar mixture in a swirl on top of bowls. Drizzle bowls with cream cheese glaze and top with chopped pecans. Serve immediately and enjoy!
