Instructions
Bruschetta Topping
In a medium bowl, combine bruschetta ingredients and season with salt and pepper to taste. Place in refrigerator while you prepare the gnocchi.
Crispy Gnocchi and Browned Butter
Melt olive oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add gnocchi and fry in a single layer until golden brown. Flip gnocchi and add remaining 1/2 tablespoon butter and fry until gnocchi is golden brown.
In a separate medium skillet, melt remaining 2 tablespoons butter over medium heat, swirling pan occasionally until butter is a deep golden brown and fragrant, about 3-5 minutes of cooking.
Drizzle browned butter over crispy gnocchi and spoon bruschetta topping on top. Garnish gnocchi with fresh basil and Parmesan and serve. Enjoy!
