Ingredients

Bruschetta Topping

  • 2 medium tomatoes, diced into 1/4-inch cubes
  • 2 medium cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon granulated sugar
  • 1/4 cup fresh minced basil
  • Kosher salt and pepper to taste

Crispy Gnocchi and Browned Butter

  • 1 lb potato gnocchi, cooked according to package instructions
  • 1 tablespoon olive oil
  • 3-1/2 tablespoons unsalted butter, divided
  • Minced fresh basil and grated Parmesan for topping

Instructions

Bruschetta Topping

  • In a medium bowl, combine bruschetta ingredients and season with salt and pepper to taste. Place in refrigerator while you prepare the gnocchi.

Crispy Gnocchi and Browned Butter

  • Melt olive oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add gnocchi and fry in a single layer until golden brown. Flip gnocchi and add remaining 1/2 tablespoon butter and fry until gnocchi is golden brown.
  • In a separate medium skillet, melt remaining 2 tablespoons butter over medium heat, swirling pan occasionally until butter is a deep golden brown and fragrant, about 3-5 minutes of cooking.
  • Drizzle browned butter over crispy gnocchi and spoon bruschetta topping on top. Garnish gnocchi with fresh basil and Parmesan and serve. Enjoy!

Notes

Storing Instructions
Gnocchi is best if served immediately after assembly.
