Basically this gnocchi is taking all the components from classic bruschetta, minus the bread, with the addition of crispy pan-fried gnocchi and a killer browned butter sauce.
I think you’ll find that this gnocchi deserves a firm spot on your side dish lineup for the rest of summer.
Naturally, my favorite part about this gnocchi is that it tastes complicated, but you can totally have it on the table in only 20 minutes. And it compliments just about any meal.
Also tastes pretty dang fantastic straight out of the pan, not gonna lie.

Ingredients
Bruschetta Topping
- 2 medium tomatoes, diced into 1/4-inch cubes
- 2 medium cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon granulated sugar
- 1/4 cup fresh minced basil
- Kosher salt and pepper to taste
Crispy Gnocchi and Browned Butter
- 1 lb potato gnocchi, cooked according to package instructions
- 1 tablespoon olive oil
- 3-1/2 tablespoons unsalted butter, divided
- Minced fresh basil and grated Parmesan for topping
Instructions
Bruschetta Topping
- In a medium bowl, combine bruschetta ingredients and season with salt and pepper to taste. Place in refrigerator while you prepare the gnocchi.
Crispy Gnocchi and Browned Butter
- Melt olive oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add gnocchi and fry in a single layer until golden brown. Flip gnocchi and add remaining 1/2 tablespoon butter and fry until gnocchi is golden brown.
- In a separate medium skillet, melt remaining 2 tablespoons butter over medium heat, swirling pan occasionally until butter is a deep golden brown and fragrant, about 3-5 minutes of cooking.
- Drizzle browned butter over crispy gnocchi and spoon bruschetta topping on top. Garnish gnocchi with fresh basil and Parmesan and serve. Enjoy!
