A tangy fresh dill feta dressing coats every inch of this colorful artichoke white bean salad that's packed with fresh flavors and lots of texture.

Ingredients

Dill Feta Dressing

Artichoke White Bean Salad

  • 1 jar (12 oz) water-packed artichoke hearts, drained and roughly chopped
  • 2 cans (15 oz each) white beans, drained and rinsed well
  • 1 cup shelled edamame
  • 1/2 cup pickled (or fresh) sliced red onion
  • Salt and pepper to taste
  • Additional fresh dill sprigs, lemon zest, and feta for garnishing

Instructions

Dill Feta Dressing

  • Combine all dressing ingredients in a blender or food processor. Blend on high speed until dressing is smooth. Season dressing with salt and pepper to taste and store in refrigerator until ready to use.

Artichoke White Bean Salad

  • Combine artichoke hearts, white beans, edamame, and red onion in a serving bowl. Drizzle dill feta dressing over top and toss to evenly coat.
  • Season salad with salt and pepper to taste and garnish with additional dill sprigs, lemon zest, and feta for serving. Enjoy!
