1jar (12 oz)water-packed artichoke hearts, drained and roughly chopped
2cans (15 oz each)white beans, drained and rinsed well
1cupshelled edamame
1/2cuppickled (or fresh) sliced red onion
Salt and pepper to taste
Additional fresh dill sprigs, lemon zest, and feta for garnishing
Instructions
Dill Feta Dressing
Combine all dressing ingredients in a blender or food processor. Blend on high speed until dressing is smooth. Season dressing with salt and pepper to taste and store in refrigerator until ready to use.
Artichoke White Bean Salad
Combine artichoke hearts, white beans, edamame, and red onion in a serving bowl. Drizzle dill feta dressing over top and toss to evenly coat.
Season salad with salt and pepper to taste and garnish with additional dill sprigs, lemon zest, and feta for serving. Enjoy!
