I love a good bean salad and today’s latest bowl of goodness just feels like pure spring!
I’m well aware we have a good few weeks to go before the official arrival of spring but I’m kicking off the party early and bringing things like fresh dill, lemon, edamame, and naturally a heavy hand of feta to our salad game today.

The real winner of this salad is definitely the dressing. We’re blitzing fresh dill, lemon, and feta together with a few other basic vinaigrette ingredients in the blender and the end result is a bowl of creamy green gold you’re going to want to put on everything.
But please, hold yourself back and put it on this salad first.

Dill Artichoke White Bean Salad

Ingredients
Dill Feta Dressing
- 1/4 cup lightly-packed fresh dill
- 1 medium clove garlic, minced
- 3 tablespoons freshly-squeezed lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or agave nectar
- 3 tablespoons crumbled feta cheese
- 3 tablespoons extra-virgin olive oil
- Salt and pepper to taste
Artichoke White Bean Salad
- 1 jar (12 oz) water-packed artichoke hearts, drained and roughly chopped
- 2 cans (15 oz each) white beans, drained and rinsed well
- 1 cup shelled edamame
- 1/2 cup pickled (or fresh) sliced red onion
- Salt and pepper to taste
