Frosted Oatmeal Raisin Breakfast Bars
Soft, chewy and packed with tons of oats and raisins, these frosted oatmeal raisin breakfast bars are the ULTIMATE grab 'n' go breakfast! You won't believe they're on the lighter side.
Frosting
- 1/4 cup butter, softened
- 3/4 cup powdered sugar
- 2 teaspoons vanilla extract
- 1-2 tablespoons half and half cream
Bars
Preheat oven to 350F. Line a 9x13 baking pan with tin foil and lightly grease. Set aside.
In a large bowl, beat butter and sugar together until creamy. Beat in yogurt, egg, and vanilla until smooth. Fold in flour, oats, baking soda, salt, and raisins until a smooth dough forms.
Spread dough in prepared pan. Bake bars at 350F 18-20 minutes or until bars are lightly golden around edges. Cool completely on a wire cooling rack.
Frosting
In a medium bowl, beat butter and sugar together with handheld electric mixer until completely smooth and creamy. Add vanilla and cream by the tablespoon until a smooth, spreadable consistency. Frost cooled bars and slice into bars. Enjoy!
