Greek Avocado Toast
This Greek avocado toast is quick and easy enough for any kind of breakfast occasion! Pile toasted bread slices with silky mashed avocado, crisp cucumber slices, lots of fresh cherry tomatoes, and feta.

2 medium avocados, mashed 4 slices whole-grain bread, toasted 1 small cucumber, thinly sliced 1/2 cup cherry tomatoes, halved 1/4 cup crumbled feta cheese 1/4 cup pitted kalamata olives optional 1 tablespoon red wine vinegar 1/2 teaspoon Dijon mustard 1 tablespoon extra-virgin olive oil 1/4 teaspoon dried oregano Salt and pepper to taste
Spread mashed avocado in an even layer on toasted bread slices. Arrange cucumber, cherry tomatoes, feta, and olives if using on top.
In a small bowl, whisk red wine vinegar, Dijon mustard, olive oil, and oregano until smooth. Season with salt and pepper to taste.
Drizzle dressing over avocado toast and serve immediately. Enjoy!
