This greek-style avocado toast is quick and healthy enough for a filling weekday breakfast, but also fancy enough for any weekend brunch.—You’ll never go back to regular old toast again!

I have a confession, friends. A REALLY-BIG, super-juicy, ultra-embarrassing confession. Are you ready?
Today marks only the SECOND time I’ve had avocado toast in my life. Also uhhhhh, the first time was only just a week ago.
You’re probably wondering about now….what is even WRONG with Sarah?! Is she living in a box? Have this chick ever even HEARD of Pinterest?
Like I said, guys. I am huuuuuugely embarrassed. This is all just so…..wrong…. NOW I know why my life felt so incomplete! It was lacking avocado toast.

Do you know how I plan to make up for this avocado injustice? I plan to eat avocado toast for breakfast every day for the rest of my living days.

SO. Any big plans for the weekend? This is kind of going to be a bittersweet and more-than-likely emotional weekend for me: Some of you may know I’m a dancer when I’m not baking, right? I have my last-ever dance performances happening tomorrow and Sunday.
Like….last EVER! I’ve been performing with this studio since I was 5 years old and this weekend is the last time I’ll ever step on stage with the girls and teachers I grew up dancing with.
Also….ummm I’m performing in five (yes, FIVE) dance numbers, two of which are solos (eeeek!!) so my stress-level combined with last-performance emotions are definitely kicking my butt right now.
Just….PUH-LEEZE send positive thoughts my way that I don’t cry on stage during the finale or something mortifying like that.
Also….keep my poor mother in mind too. She already warned me that she’s going to be in the audience bawling her eyes out during my solos. I worry for her Kleenex supply….

ANYWAYZ. Back to our avocado toast business.
Guys, how many of us are in mad rush-mode in the morning? I feel lucky enough to say that MY mornings are pretty low-key and stress-free (yeah, just wait til this fall) so I’m not scrambling to shove breakfast in my face and then run out the door, but still….I don’t particularly like slaving over gourmet breakfasts especially on weekdays either.
Enter super-speedy, ready-in-five, keeps-ya-full-for-hours HEALTHY avocado toast. My friends, this is the answer to your on-the-go breakfast PRAYERS.
Sorry, Starbucks. I won’t be needing your drive-thru anymore. Except for in the afternoons when it’s time for my s’mores frappuccino-run.
Side note: Have you tried those frappes yet?? They are to DIE for. They blow my mind in the best way. They also take my money in a not-so-nice way.

Seriously all that’s involved in this toast is the following: Mash up some ripe avocado with a few seasonings and a little lime juice. Toast up your bread. Slather the mashed avocado over that. Sprinkle some chopped fresh cherry tomatoes (loooooooove these!) and a lot of feta love on top. Greek-style baby!!

You faceplant into the stack and probably get the green stuff all over your jammies, but that’s a-ok because you’re too much in avocado toast-bliss to care.
Sidenote: Your friends will totally be jealous when you walk into the office sporting that avocado toast. Be sure to tell them that this is what the COOL kids have for breakfast now’a’days.

This toast is seriously so simple, but trust me on this, guys: It holds a powerhouse of flavors and SCORE! It’s absolutely good for you and will totally keep your energy level UP for hours.
But only as long as you have an extra-large cup of coffee on the side. I wouldn’t know any other way. aheeeeem.
I’m planning on powering up for my performances this weekend by eating THIS and only this avocado toast for breakfast. And possibly for an intermission snack too. Maybe even for dinner if I’m in a lazy-ish mood.
Which I undoubtedly will be. Fast-paced weekends give me EVERY excuse in the book to eat avocado toast the lazy way.

Brainstorm: Let’s be lazy TOGETHER this weekend and make avocado toast!
Greek Avocado Toast with Cherry Tomatoes
Ingredients
- 2 medium avocados, pitted, and diced
- 1/2 teaspoon garlic powder
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 slices bread, toasted
- 1/4 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
Instructions
- Place avocado in a small bowl and mash with garlic powder and lemon juice. Season with salt and pepper to taste.
- Spread avocado mixture on top of toasted bread and top with feta and tomatoes. Serve immediately and enjoy!

Second time having avocado? No judgement here! Now that I’ve been blogging, there are soooo many foods I haven’t tried yet, but these recipes make everything seem so accessible! So, no worries, everyone has been there:). And yes, avo toast will be in your life for ever and ever now, but it’s so delicious you’ll never grow tired of it. I can’t believe your last performance is this weekend! AH!! What are you going to do now that that chapter is over? My sister danced for 17 years and I loved watching her perform. This is delicious, I make that quite often. For a nice variation I recommend you try fava bean puree instead of the avocado. Just blanch the fava beans, blitz with a little olive oil and a clove of garlic and seasoning. I also top with cherry tomatoes and blue cheese.
