This Greek avocado toast is quick and easy enough for any kind of breakfast occasion! Pile toasted bread slices with silky mashed avocado, crisp cucumber slices, lots of fresh cherry tomatoes, and crumbled feta.

If it’s not an absolutely loaded avocado toast, it just doesn’t belong on your breakfast agenda.

- Toasted whole-grain bread slices and creamy mashed avocado
- Crisp cucumber slices and fresh cherry tomatoes
- Tangy crumbled feta and salty kalamata olives (I leave the olives out most of the time, but totally your call!)

- Avocados
- Bread
- Cucumber
- Cherry tomatoes
- Feta cheese
- Kalamata olives (optional)
- Red wine vinegar
- Dijon mustard
- Olive oil
- Dried oregano
Choosing Your Bread
You can use any bread base you wish for this avocado toast! We love a rustic whole-grain bread such as this recipe but this toast also works great with sourdough, ciabatta, rye bread, or a bagel.

Tips for Perfect Avocado Toast
- Use ripe avocados – ripe avocados will mash into a smooth paste for the toast.
- Thinly slice cucumbers – uniform thin slices will make the toast easy to eat.
- Serve toast immediately – probably goes without saying but the flavors and textures are best if you enjoy the toast immediately after assembly.
Recipe Variations
Try these ideas for a different twist on this toast.
- Use another cheese – replace the feta with goat cheese, grated Parmesan, or cotija cheese.
- Add meat – try adding crisp bacon or breakfast sausage patties.
- Top with fresh herbs – try minced basil, parsley, or chives.

Greek Avocado Toast

Ingredients
- 2 medium avocados, mashed
- 4 slices whole-grain bread, toasted
- 1 small cucumber, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1/4 cup pitted kalamata olives optional
- 1 tablespoon red wine vinegar
- 1/2 teaspoon Dijon mustard
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Spread mashed avocado in an even layer on toasted bread slices. Arrange cucumber, cherry tomatoes, feta, and olives if using on top.
- In a small bowl, whisk red wine vinegar, Dijon mustard, olive oil, and oregano until smooth. Season with salt and pepper to taste.
- Drizzle dressing over avocado toast and serve immediately. Enjoy!

Second time having avocado? No judgement here! Now that I’ve been blogging, there are soooo many foods I haven’t tried yet, but these recipes make everything seem so accessible! This is delicious, I make that quite often. For a nice variation I recommend you try fava bean puree instead of the avocado. Just blanch the fava beans, blitz with a little olive oil and a clove of garlic and seasoning. I also top with cherry tomatoes and blue cheese.
