Ingredients
4mediumripe avocados, pitted
1/2cupfinely-diced cherry tomatoes
1/2cupfinely-diced cucumber
1/4cupfinely-diced red onion
1/4cupcrumbled feta cheese
1/4cupkalamata olives, halved
2tablespoonsfreshly-squeezed lemon juice
1tablespoonminced fresh parsley
Salt and pepper to taste
Pita chips for serving
Instructions
Place avocado in a large bowl and mash well with a fork or potato masher. Fold in tomatoes, cucumber, red onion, feta, olives, lemon juice, and parsley.
