Packed with fresh Greek-inspired ingredients and ready in minutes, this Greek guacamole is unbelievably fresh-tasting and goes great with pita chips for dipping.

Ingredients

  • 4 medium ripe avocados, pitted
  • 1/2 cup finely-diced cherry tomatoes
  • 1/2 cup finely-diced cucumber
  • 1/4 cup finely-diced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup kalamata olives, halved
  • 2 tablespoons freshly-squeezed lemon juice
  • 1 tablespoon minced fresh parsley
  • Salt and pepper to taste
  • Pita chips for serving

Instructions

  • Place avocado in a large bowl and mash well with a fork or potato masher. Fold in tomatoes, cucumber, red onion, feta, olives, lemon juice, and parsley.
  • Season guacamole with salt and pepper to taste and serve with pita chips. Enjoy!
