Grilled Chicken Margherita

This grilled chicken margherita features grilled chicken topped with fresh mozzarella, juicy tomato slices, and lots of fresh basil and balsamic glaze.

Ingredients

  • 1 lb boneless skinless chicken breasts (2 medium breasts)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon granulated garlic
  • 8 slices fresh mozzarella cheese
  • 1 medium tomato, thinly sliced
  • 1/4 cup minced fresh basil
  • Balsamic glaze for drizzling

Instructions

  • Pat chicken dry with paper towels and cut each chicken breast in half width-wise so you have 4 thin chicken cutlets. Rub chicken breasts on both sides with olive oil and season both sides with salt, pepper, and garlic.
  • Heat a grill to medium-high heat. Grill chicken over medium-high heat, flipping once until chicken registers 165F. Transfer chicken to a baking dish.
  • Top each chicken breast with a few slices of mozzarella, and a tomato slice. Sprinkle with additional salt and pepper. Broil chicken breasts under high heat 2-3 minutes or until cheese is melted.
  • Top chicken with basil and drizzle with balsamic glaze. Serve chicken immediately and enjoy!
