Grilled Veggie Orzo Pasta Salad

This grilled vegetable orzo salad is jam-packed with a rainbow of smoky grilled summer vegetables, tender orzo, and tossed in an incredible garlic herb vinaigrette.

Ingredients

Grilled Vegetables

  • 1 medium sweet pepper, cored and cut into 1/2-in cubes
  • 1 medium summer squash, diced into 1/2-in cubes
  • 1 medium zucchini, diced into 1/2-in cubes
  • 8 oz mushrooms, diced into 1/2-in cubes
  • 1 small red onion, diced into 1/2-in cubes
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Garlic Herb Dressing and Salad

  • 1/4 cup white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 2 medium cloves garlic, minced
  • 1 tablespoon minced fresh parsley
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste
  • 1 lb orzo pasta
  • 1/4 cup minced fresh basil
  • 1/4 cup grated Parmesan cheese

Instructions

Grilled Vegetables

  • Preheat a grill over medium-high heat OR lightly grease a grill pan to use on the stovetop.
  • In a large bowl, combine all vegetables, olive oil, and salt and pepper to taste until evenly coated. Grill vegetables on a sheet of aluminum foil or in a grill basket over medium-high heat, tossing occasionally until vegetables are tender, about 8-10 minutes. Set vegetables aside.

Garlic Herb Dressing and Salad

  • In a small bowl, whisk vinegar, lemon juice, honey, garlic, and parsley until smooth. Slowly drizzle in olive oil, whisking constantly until dressing is smooth. Season with salt and pepper to taste.
  • Cook orzo according to package instructions then drain and rinse well in cold water until cooled.
  • Combine cooked orzo, grilled vegetables, basil, Parmesan, and dressing in a large bowl and toss until combined. Season salad with salt and pepper to taste and refrigerate until ready to serve. Enjoy!
