Honey Roasted Peach Burrata Toast

Honey roasted peaches and creamy burrata cheese are a dream combo in this summery peach burrata toast! Ready in minutes and perfect for any breakfast occasion.

Ingredients

  • 4 medium ripe, yet firm peaches, sliced into 1/4-inch thick wedges
  • 3 tablespoons honey
  • 8 slices ciabatta or Italian bread
  • 2 tablespoons extra-virgin olive oil
  • 8 oz burrata cheese, room temperature
  • 4 oz prosciutto (optional)
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup minced fresh basil
  • Additional honey for drizzling

Instructions

  • Preheat oven to 400F. Line a medium sheet pan with parchment paper.
  • Arrange peach slices in a single layer on prepared sheet pan and drizzle with honey. Roast peaches at 400F 10-15 minutes until softened and juicy.
  • Arrange bread in a single layer on a separate large sheet pan and drizzle with olive oil. Broil bread 1-2 minutes until golden brown, flip slices, and broil on opposite side 1-2 minutes until golden brown. Transfer slices to a serving plate.
  • Break burrata into 8 pieces and spread in an even layer over toasted bread slices. Arrange roasted peaches in a fan on top and garnish toast with prosciutto if using, toasted almonds, fresh basil, and additional drizzles of honey. Serve immediately and enjoy!

Toast is best if served immediately after assembly.
