Make the chicken: In a small bowl, combine spices. Brush chicken with olive oil and coat each chicken breast on both sides with spice mix. Grill chicken over medium-high heat, turning once until chicken registers 165F, about 10 minutes. Keep chicken warm.
Make the rice: Heat olive oil over medium high heat until shimmery. Saute onion, garlic, and ginger in oil until just softened. Stir in soy sauce, pineapple, and cooked rice. Stir rice occasionally until lightly browned and fragrant. Season rice with salt and pepper to taste.
