So I’m probably obsessed with jerk food. Not the literal term of that that would likely imply that I like mean food, but JERK food, guys.
Caribbean-style. Sweet ‘n’ spicy ‘n’ tropical-y. My current food soulmate amongst an extremely long foodie obsession list.
And you should probably be aware that this grilled jerk chicken with a kickin’ awesome pineapple fried rice tops the tippy-tippy top of that list.
It’s basically everything that dinner could ever ask for. Or anytime of the day which means that midnight fridge raids are not out of the question.
Let’s talk about the heart and soul of this grilled chicken for a second. It’s not the actual chicken like you might have thought, but it’s actually the rice. It starts with a pouch of Success® Whole Grain Brown Rice which is pre-boiled and what that basically means is that the rice cooks itself in it’s little pouch right on the stove in only 10 minutes. With Success Brown Rice you can enjoy the same taste and similar nutritional benefits of long cooking brown rice, but in ¼ the cooking time.
I’ll be honest, my mind kinda blew over how freaking easy that whole process was. ONLY easy-peasy rice for this girl from here on out.
But we’re not done with our whole rice magic act yet, guys. A handful of ingredients later and we’ve turned our plain jane brown rice into PINEAPPLE fried rice that believe me, is every bit as good as it sounds.
Pop quiz: what goes best with tropical fried rice? Well, it’s jerk grilled chicken of course.
We’re using my homemade jerk seasoning mix on this chicken and trust me, it’s worth the extra minute it takes to throw it together. This chicken is moist, juicy, sweet, spicy, and perfect-o.
It also looks pretty dang gorgeous on top of a bed of fried rice. Pretty sure it tastes even better than it looks too, if we’re being brutally honest here. Sweet ‘n’ spicy, for.freaking.life.

Jerk-Grilled Chicken with Pineapple Fried Rice

Ingredients
Chicken
- 1 teaspoon allspice
- 1 teaspoon chili powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 tablespoon coconut sugar or brown sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 lb chicken breasts
- 1 tablespoon olive oil
Rice
- 1 tablespoon olive oil
- 1 small onion finely diced
- 2 cloves garlic minced
- 1 teaspoon ground ginger
- 3 tablespoons soy sauce
- 1 cup finely diced pineapple
- 1 bag Success Whole Grain Brown Rice prepared according to package instructions (about 2 cups)
- Salt and pepper to taste
Instructions
- Make the chicken: In a small bowl, combine spices. Brush chicken with olive oil and coat each chicken breast on both sides with spice mix. Grill chicken over medium-high heat, turning once until chicken registers 165F, about 10 minutes. Keep chicken warm.
- Make the rice: Heat olive oil over medium high heat until shimmery. Saute onion, garlic, and ginger in oil until just softened. Stir in soy sauce, pineapple, and cooked rice. Stir rice occasionally until lightly browned and fragrant. Season rice with salt and pepper to taste.
- Serve chicken hot with fried rice. Enjoy!
