Lemon Dill Smashed Fingerling Potatoes

These smashed fingerling potatoes feature roasted fingerling potatoes smashed and broiled until crispy and then drizzled with a fresh lemon dill sauce.

Ingredients

  • 2 lbs fingerling potatoes
  • 2 tablespoons unsalted butter, melted
  • Salt and pepper to taste
  • 1/4 cup freshly-squeezed lemon juice
  • 1 tablespoon grated lemon zest
  • 3 medium cloves garlic, crushed into a paste
  • 2 tablespoons minced fresh dill

Instructions

  • Preheat oven to 425F and lightly grease a large sheet pan. Arrange potatoes in a single layer on pan and prick all over with a fork.
  • Roast fingerling potatoes at 425F 20-25 minutes until potatoes are tender when pierced with a fork. Use a fork or a glass to smash fingerling potatoes flat and space apart on sheet pan.
  • Drizzle fingerling potatoes with melted butter and season with salt and pepper to taste. Broil potatoes on high 3-5 minutes until potatoes are crispy and golden brown.
  • In a small bowl, whisk lemon juice, zest, garlic, and dill. Spoon sauce over potatoes and serve immediately. Enjoy!
