2lbsfingerling potatoes
2tablespoonsunsalted butter, melted
Salt and pepper to taste
1/4cupfreshly-squeezed lemon juice
1tablespoongrated lemon zest
3mediumcloves garlic, crushed into a paste
2tablespoonsminced fresh dill
Instructions
Preheat oven to 425F and lightly grease a large sheet pan. Arrange potatoes in a single layer on pan and prick all over with a fork.
Roast fingerling potatoes at 425F 20-25 minutes until potatoes are tender when pierced with a fork. Use a fork or a glass to smash fingerling potatoes flat and space apart on sheet pan.
Drizzle fingerling potatoes with melted butter and season with salt and pepper to taste. Broil potatoes on high 3-5 minutes until potatoes are crispy and golden brown.
In a small bowl, whisk lemon juice, zest, garlic, and dill. Spoon sauce over potatoes and serve immediately. Enjoy!
