Lemon roasted broccoli roasts up perfectly tender and packed full of vibrant fresh lemon flavor! This easy veggie side dish goes well with any dinner.

Ingredients

  • 5 cups fresh 1-inch broccoli florets
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly-squeezed lemon juice
  • Salt and pepper to taste
  • 2 medium cloves garlic, crushed into a paste
  • 1 tablespoon grated lemon zest
  • 1 tablespoon fresh minced dill or parsley

Instructions

  • Preheat oven to 400F and lightly grease a medium sheet pan. Toss broccoli, olive oil, lemon juice, and salt and pepper to taste together until evenly coated and arrange in a single layer on sheet pan.
  • Roast broccoli at 400F 10-15 minutes, tossing broccoli once halfway through roasting until broccoli is tender. Remove broccoli from oven and toss garlic, lemon zest, and dill into broccoli until combined. Serve broccoli warm and enjoy!
