Veggie Monday. It’s a thaaaaaaaang.
Roasty-toasty lemon broccoli. It’s my new favorite thaaaaaaang in the whole dang world.
Ice cream is good too, but the green stuff is the next best thing. No really, trust me!
So this broccoli paradise is part of a supa’-fun program I partnered up with for today. Have you guys heard of the wildly-popular cookbook It’s All Greek To Me? Please tell me you have. It’s pretty much just the MUST-HAVE cookbook for any foodie. Guess what?! Kidding. Seriously though, I think I really could talk about this broccoli for the next 20 minutes. You’d probably get bored though, so I won’t do that to ‘ya. My life isn’t that boring and lame-o.
Oh, wait. Maybe it is. This broccoli is all I’ve been thinking about all weekend. Erghhh…Maybe I need a new hobby.

I chose this recipe from Debbie’s cookbook, because just the TITLE of it was enough to pull me in. Then I ended up making it multiple times because it was just that good.
LEMON. OVEN-ROASTED. Tender, roasty-toasty, pretty-green BROCCOLI. All win-win adjectives.
Freshly-squeezed lemon juice brightens up otherwise-bland broccoli and a quick 10-minute roast in the oven seals all the flavors together. I like to call it Broccoli Voodoo. sha-zaaaam!
For realz though, guys. Henceforth, from here on out, broccoli shall never be boring again. There’s just too much flavor in this panful of happiness.
And uhhhhmm. 15 minutes til face-shoveling. Nothing in the whole dang world beats that.
If you’re looking for a killer entree to serve this broccoli alongside, might I suggest this chicken parmesan? Or this beef bolognese. Or these meatballs….Ahhh! Decisions, decisions…
I think I just choose to have this broccoli every night for the rest of ‘mah LIFE.

Oven-Roasted Broccoli with Lemon + A Cookbook Giveaway

Ingredients
- 3 cups fresh broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 2 tablespoons lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons lemon juice
Instructions
- Place broccoli florets on a grease baking sheet. Drizzle with oil and toss with minced garlic, lemon zest, salt, and pepper.
- Bake broccoli at 400F 10-12 minutes or until fork-tender. Remove from oven and toss with lemon juice. Serve broccoli warm.

Broccoli and lemon is such a winning combo. I make it all the time. I didn’t know it was Greek. Before I would have said my favorite Greek food is gyros, but I guess it’s really broccoli and lemon.
