When all else fails for a veggie side dish, a good roasted broccoli recipe has always got your back!
Times that by 10 if we’re inviting all this fresh, lemony goodness to the party. Anyways, meet the side dish I’ll pair with pretty much anything and everything.

This recipe couldn’t really be easier to throw together and I almost feel wrong calling this a recipe! I’m talking minimal ingredient list, and only a 10-15 minute roast time. You could make this lemony goodness in your sleep!

Tips for Perfect Roasted Broccoli
- Cut broccoli in uniform pieces – aim for uniform 1-inch pieces so the broccoli roasts evenly.
- Roast broccoli in an even layer – this will ensure that the broccoli crisps up during roasting.
- Toss broccoli halfway through roasting – I like to do this step to ensure that the broccoli gets evenly browned.
- Add garlic, lemon zest, and herbs after roasting – adding these ingredients after roasting will preserve their flavor.
Recipe Variations
Try these ideas for a different twist on this broccoli.
- Use another citrus – try lime in place of the lemon.
- Roast with more veggies – try roasting diced sweet peppers, green beans, or zucchini with broccoli.
- Add cheese – sprinkle broccoli with a little grated Parmesan or asiago cheese before roasting.
Serving Suggestions
This broccoli is great served alongside a variety of main dishes! Try serving it alongside pastas, grilled steak, pork chops, salmon, rice pilaf, or use it as a salad or grain bowl topper.

Lemon Roasted Broccoli

Ingredients
- 5 cups fresh 1-inch broccoli florets
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons freshly-squeezed lemon juice
- Salt and pepper to taste
- 2 medium cloves garlic, crushed into a paste
- 1 tablespoon grated lemon zest
- 1 tablespoon fresh minced dill or parsley
Instructions
- Preheat oven to 400F and lightly grease a medium sheet pan. Toss broccoli, olive oil, lemon juice, and salt and pepper to taste together until evenly coated and arrange in a single layer on sheet pan.
- Roast broccoli at 400F 10-15 minutes, tossing broccoli once halfway through roasting until broccoli is tender. Remove broccoli from oven and toss garlic, lemon zest, and dill into broccoli until combined. Serve broccoli warm and enjoy!
