Fragrant rosemary and sweet maple syrup are the perfect combo in these tender rosemary roasted sweet potatoes! They come together in minutes and go well with a variety of dishes.

Ingredients

  • 3 medium sweet potatoes, cut into 1/2-inch cubes
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon fresh minced rosemary
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup toasted pecans for garnish

Instructions

  • Preheat oven to 400F and lightly grease a large sheet pan. In a large bowl, toss sweet potatoes, maple syrup, olive oil, rosemary, cinnamon, and salt and pepper to taste.
  • Arrange sweet potatoes in a single layer on sheet pan. Roast sweet potatoes at 400F 20-25 minutes until sweet potatoes are tender.
  • Garnish sweet potatoes with toasted pecans and serve warm. Enjoy!
