Sweet maple syrup and fragrant rosemary come together beautifully in these tender, golden sweet potatoes—the perfect dish to put on your Thanksgiving table!
Yum. Sweet potato season is officially here! Sweet potatoes have always been one of my top favorite fall dishes that I look forward to. (Roasted butternut squash comes in a close second–recipe coming soon!) It practically kills me when the weather starts warming up and it’s time to say goodbye to sweet potatoes and winter squash until next fall.
The inspiration for these lovely roasted sweet potatoes came from one of my favorite health-food grocery stores: Whole Foods.
You know how Whole Foods has that make-your-own dinner plate section? A few weeks ago, on our way back from Tennessee, we stopped at a Whole Foods for dinner and I enjoyed some of the best sweet potatoes ever. They were just amazing. They were roasted in what tasted like maple syrup and fresh rosemary. A few weeks later, after we returned home I decided that I had to create a duplicate recipe of those delicious sweet potatoes.
To me, my roast sweet potatoes tasted even better than Whole Food’s. They are everything I had hoped they would be: The sweet potatoes are so soft and golden with the delicious combination of sweet maple syrup, and fragrant rosemary in every bite. Not only do they taste amazing, but they are incredibly simple to make as well.
They only require a few ingredients that you probably have on hand. Sweet potatoes, peeled and cubed; Maple syrup; olive oil (not much!) Fresh rosemary; Salt and pepper. So simple, right?
Then, let the oven do the work for you, and roast the sweet potatoes at 400F about 40 minutes. Your kitchen will fill up with the most amazing smells during this time 😀

These sweet potatoes would be more than acceptable to serve at your Thanksgiving table this year—they make a perfect accompaniment to roast chicken or turkey. I know you and your family will love ’em just as much as mine does!
Maple-Rosemary Roasted Sweet Potatoes
Ingredients
- 3 large sweet potatoes peeled and cut into 1-in cubes
- 2 tablespoons maple syrup
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary minced
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
Instructions
- Preheat oven to 400F. In a large bowl, toss sweet potatoes with all ingredients until combined. Spread sweet potatoes in an even one-layer on a baking sheet.
- Bake sweet potatoes at 400F 35-40 minutes, stirring once until potatoes are tender and golden. Transfer sweet potatoes to a serving dish, and serve warm.
