Zucchini Sesame Soba Noodles
In a large skillet over medium-high heat, heat sesame oil until shimmery. Add zucchini and green onions to skillet and saute 3-4 minutes until tender and fragrant. Add garlic and saute 1 minute.
Reduce heat to medium and add soy sauce, rice vinegar, honey, and sesame seeds. Bring to low simmer, stirring occasionally until sauce is bubbly.
Remove from heat and toss soba noodles into sauce until evenly coated. Keep noodles warm while you prepare the salmon.
Miso Ginger Glazed Salmon
In a small bowl, whisk miso, soy sauce, ginger, and sugar until smooth. Set aside.
Pat salmon dry and season both sides with salt and pepper. In a large skillet heat olive oil over medium-high heat until shimmery. Add salmon to pan and sear 3-4 minutes per side until salmon registers 145F. Keep salmon warm and set aside.
Wipe skillet clean and add premixed sauce ingredients. Bring to a low simmer over medium-high heat until sauce is thickened and glaze consistency. Remove pan from heat and tuck salmon into pan, spooning some of the glaze on top.
Serve the salmon with the soba noodles, garnishing with extra miso ginger glaze, sesame seeds, and green onions. Enjoy!
