First order of business is the sesame soba noodles. I recommend starting these before you tackle the salmon because the salmon cooks up FAST and you want that to be the last component you make so it stays hot.
If you don’t have soba noodles on hand, lo mein or even spaghetti noodles would work just fine here. HOWEVER, I personally believe not much can beat the earthy flavor the buckwheat in the soba noodles gives this dish. So insanely delicious.
Pan fry up the zucchini ribbons, a handful of green onions, + garlic in sesame oil and then we can start building up the sauce.
Soy sauce, rice vinegar, honey, and a few tablespoons toasty sesame seeds build up all the flavors and then you’re just gonna nestle the cooked soba noodles right into all this goodness. Bam, noodles are done!
Let’s make the salmon!
Pretty basic stuff here, we’re going to mix up our miso ginger sauce beforehand and then prep the salmon for pan searing.
Season the salmon well with salt and pepper and then it’s just a quick pan sear in olive oil.
Make the miso ginger sauce in the same pan until bubbly and then nestle the salmon back into the pan and let it soak up ALL that flavorful glaze goodness.
Grab a sturdy pasta bowl and construct a mountain of noodles, top with a salmon filet, a handful of green onions + a sprinkle of sesame noodles.

Miso Ginger Glazed Salmon with Zucchini Sesame Soba Noodles

Ingredients
Zucchini Sesame Soba Noodles
- 2 tablespoons sesame oil
- 1 large zucchini, peeled into ribbons using a vegetable peeler
- 1/2 cup sliced green onions
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 2 tablespoons toasted sesame seeds
- 9.5 oz buckwheat soba noodles cooked according to package instructions and kept warm
- Salt and pepper to taste
Miso Ginger Glazed Salmon
- 2 tablespoons white miso
- 1 tablespoon soy sauce
- 1 tablespoon grated fresh ginger
- 2 tablespoons coconut sugar (or brown sugar)
- 1-1/2 lbs salmon filets
- Salt and pepper to taste
- 2 tablespoons olive oil
- Additional green onions and sesame seeds for garnish
Instructions
Zucchini Sesame Soba Noodles
- In a large skillet over medium-high heat, heat sesame oil until shimmery. Add zucchini and green onions to skillet and saute 3-4 minutes until tender and fragrant. Add garlic and saute 1 minute.
- Reduce heat to medium and add soy sauce, rice vinegar, honey, and sesame seeds. Bring to low simmer, stirring occasionally until sauce is bubbly.
- Remove from heat and toss soba noodles into sauce until evenly coated. Keep noodles warm while you prepare the salmon.
Miso Ginger Glazed Salmon
- In a small bowl, whisk miso, soy sauce, ginger, and sugar until smooth. Set aside.
- Pat salmon dry and season both sides with salt and pepper. In a large skillet heat olive oil over medium-high heat until shimmery. Add salmon to pan and sear 3-4 minutes per side until salmon registers 145F. Keep salmon warm and set aside.
- Wipe skillet clean and add premixed sauce ingredients. Bring to a low simmer over medium-high heat until sauce is thickened and glaze consistency. Remove pan from heat and tuck salmon into pan, spooning some of the glaze on top.
- Serve the salmon with the soba noodles, garnishing with extra miso ginger glaze, sesame seeds, and green onions. Enjoy!

It is insanely good. But I’m not sure what miso paste you used? I only had dark miso paste and the glaze was a bit too intense. My picky eater of a kid just couldn’t get enough of the soba though. They even ate all the zucchini in there.

Hi Rin – I used a white miso paste, which is a bit milder in flavor and what I would recommend using in the glaze if you try it again! So glad to hear the soba noodles were a hit! 🙂
