Peach Compote
3mediumpeaches, peeled, pitted and diced into 1-in cubes
In a small saucepan over medium heat, bring all peach compote ingredients to a simmer. Reduce heat to medium-low and let compote simmer for 15-20 minutes, stirring occasionally until compote is thickened. Remove from heat and keep warm.
Cream Cheese Stuffed French Toast
Carefully cut a small 1-1/2 to 2 inch slit in width of french bread slices. Set aside.
In a small bowl, beat softened cream cheese with sugar and 1/2 teaspoon vanilla extract. Spoon cream cheese filling into cut slit in french bread slices. Set aside for a moment.
In a large bowl, whisk eggs, milk, remaining vanilla, and cinnamon until smooth.
Heat a griddle or skillet over medium-high heat and grease with butter. Dip bread slices in egg mixture, coating both sides. Working in batches, cook french toast 1-1/2 to 2 minutes on each side, flipping once. Repeat with remaining french toast.
Serve french toast hot with peach compote and powdered sugar on top. Enjoy!
