Soft and chewy peanut butter chocolate granola bars are fast to mix up and make a filling grab-and-go snack or breakfast!

  • Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper and set aside.
  • In a large bowl, combine peanut butter, honey, coconut oil, and vanilla until smooth. Add rice cereal, oats, peanuts, flaxseeds, cinnamon, salt, and chocolate chips and fold until dough is just combined.
  • Press dough in an even layer in prepared pan. Bake bars at 350F 18-20 minutes until edges of bars are a light golden brown.
  • Allow bars to cool completely on a wire cooling rack. Chill bars in refrigerator 1 hour before slicing into bars (this helps keep them from crumbling apart during slicing) Enjoy!

Notes

Storing Instructions
Store granola bars in an airtight container at room temperature up to 4 days. Granola bars may also be frozen up to 2 months.
