Peanut butter and chocolate are one of those duos that never go out of style! Unsurprisingly, they do their job to perfection in these killer granola bars.
I’m talking perfectly soft + texture-filled, tons of peanut butter and gooey chocolate in every bite, and the kinda snack that’s almost way too easy to make.
It’s only a problem because you’re going to literally never want to stop eating these.

Start to finish these granola bars are done in only 35 minutes and the recipe easily doubles or triples if you want to stock up! Which trust me, you do.

Ingredients You Will Need
- Creamy peanut butter
- Honey
- Coconut oil
- Vanilla extract
- Puffed rice cereal
- Quick-cooking oats
- Peanuts
- Flaxseed
- Cinnamon
- Salt
- Mini semisweet chocolate chips
Choosing Your Oats
I find that these bars work best with quick-cooking oats as this finer texture eliminates the need for flour and produces a soft and chewy bar texture.
If you don’t have quick-cooking oats on hand, you can easily make them yourself. Pulse old-fashioned oats in a food processor several times until oats are partially-chopped.

Tips for Perfect Granola Bars
- Bake bars in a 9-inch square baking dish – I found that this size yields the perfect thickness for the bars.
- Use parchment paper in pan – this will make it easy to remove the bars from the pan for cutting.
- Bake bars until a light golden brown – the bars are done when the edges are a light golden brown.
- Cool bars completely before cutting – make sure you wait for the bars to cool otherwise they will crumble apart during cutting.
Recipe Variations
Try these ideas for a different twist on these bars.
- Add dried fruit – add dried cranberries, raisins, or blueberries.
- Use a different chocolate – try chopped dark chocolate or white chocolate in place of the mini chocolate chips.
- Top granola bars – top bars with a powdered sugar glaze, caramel, or melted chocolate.
Storing and Freezing Instructions
These bars store well in an airtight container at room temperature up to 4 days which makes them perfect for a quick breakfast or snack when you don’t have time to cook.
To freeze bars, allow to cool completely, store bars in a freezer-safe container, and freeze up to 2 months. Thaw bars at room temperature and enjoy within 4 days.

Peanut Butter Chocolate Granola Bars

Ingredients
- 3/4 cup creamy peanut butter
- 1/2 cup honey or agave nectar
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup puffed rice cereal
- 1 cup quick-cooking oats
- 1/2 cup chopped roasted peanuts
- 2 tablespoons flaxseeds
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 3/4 cup semisweet mini chocolate chips
Instructions
- Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper and set aside.
- In a large bowl, combine peanut butter, honey, coconut oil, and vanilla until smooth. Add rice cereal, oats, peanuts, flaxseeds, cinnamon, salt, and chocolate chips and fold until dough is just combined.
- Press dough in an even layer in prepared pan. Bake bars at 350F 20-25 minutes until edges of bars are a light golden brown. Allow bars to cool completely on a wire cooling rack before slicing into bars. Enjoy!

Peanut butter is my favorite flavor of granola bar! I used to eat so many of those Chewy brand ones in elementary school. But these sound like the healthy, grown up version of those! Love that you put wheat bran in them. That cancels out the calories from the chocolate chips, right? *wink*
