1lbpenne pasta, cooked according to package instructions until al dente

Instructions
In a large high-walled skillet or Dutch oven over medium-high heat, heat olive oil and swirl pan to evenly coat. Add shallot and Italian sausage to pan and break up with a wooden spoon over medium-high heat until sausage is no longer pink.
Add garlic and cook 1 additional minute until fragrant. Pour vodka into pan and use a wooden spoon to break up any browned bits. Allow vodka to simmer 2-3 minutes until reduced.
Pour whole tomatoes into pan and use a wooden spoon to break up tomatoes against side of pan. Add tomato paste, sugar, Italian seasoning, and red pepper flakes if using and bring tomatoes to a simmer over medium-high heat. Season sauce with salt and pepper to taste.
Reduce heat to medium-low. Allow sauce to simmer uncovered 20-25 minutes, stirring and smashing tomatoes occasionally until sauce is reduced and thickened.
Remove sauce from heat and fold heavy whipping cream and pasta into sauce until evenly coated. Season pasta with additional salt and pepper to taste if needed. Serve penne with basil and Parmesan on top. Enjoy!
