Place cucumbers in a large bowl, In a small saucepan bring vinegar, honey, salt, and pepper to a low simmer until honey is dissolved. Pour over cucumbers and chill in refrigerator at least 1 hour or overnight.
Green Goddess Dressing
Combine basil, lime juice, garlic, and honey in a food processor. Pulse several times while drizzling olive oil through the top. Pulse until dressing is smooth. Season dressing with salt and pepper to taste. Chill until ready to serve.
Salad
In a large serving bowl, arrange greens with chicken, avocado, mozzarella, and pickled cucumbers. Drizzle dressing over top when ready to serve. Enjoy!
