Just in case your summer salad game needs something to keep it going strong all the way through Labor Day weekend….here is THAT salad.
Comes adorned with quick pickles, (they’re actually called “quickles” and you won’t change my mind) chicken, piles of green goddess gold, and many more summer necessities you never knew your salad needed.
Well, I’m here to tell you that your “needs” this week include this salad and only this salad. Maybe one of last week’s cocktails on the side too.
I’m also for sure eating more quickles on the side. Don’t try and stop me.
FIRST AND FOREMOST à the quickles. We gotta get them going because they are pretty much the most important 80% of this salad. The beauty of these quickles is that you can literally make them in only an hour and they’re fantastic, BUT they can also sit in the fridge for many days and accumulate even more of that amazing crisp and sweet/tangy flavor.
NO fancy pickling ingredients either invited here. Cucumbers, apple cider vinegar, honey, salt and pepper are all she wrote here.
From there, all we need to do is assemble our spoon-worthy green goddess dressing and toss it in some gorgeous mixed greens, grab some leftover cooked chicken from the fridge, maybe cut up an avocado or 5, and why not throw some pretty little mozz pearls into the party?
Then pile approximately a mountain of quickles on top of this beautiful chicken green goddess salad mess. And more on the side, because you know what’s up.

Quick Pickle Cucumber Chicken Green Goddess Salad

Ingredients
Quick Pickle Cucumbers
- 3 small cucumbers, thinly sliced
- 1/2 cup apple cider vinegar
- 1/4 cup honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Green Goddess Dressing
- 1/2 cup fresh basil leaves
- 1/4 cup lime juice
- 1 clove garlic, minced
- 1 tablespoon honey
- 1/4 cup olive oil
- Salt and pepper to taste
Salad
- 6 cups mixed lettuce greens
- 1 cup cooked cubed chicken
- 1 medium avocado, pitted and diced
- 1/2 cup fresh mozzarella pearls
Instructions
Quick Pickle Cucumbers
- Place cucumbers in a large bowl, In a small saucepan bring vinegar, honey, salt, and pepper to a low simmer until honey is dissolved. Pour over cucumbers and chill in refrigerator at least 1 hour or overnight.
Green Goddess Dressing
- Combine basil, lime juice, garlic, and honey in a food processor. Pulse several times while drizzling olive oil through the top. Pulse until dressing is smooth. Season dressing with salt and pepper to taste. Chill until ready to serve.
Salad
- In a large serving bowl, arrange greens with chicken, avocado, mozzarella, and pickled cucumbers. Drizzle dressing over top when ready to serve. Enjoy!
