Loaded with a double whammy of berries, lots of streusel, and a creamy vanilla glaze, these red white and blue bars are an easy, festive treat for the 4th of July!

Ingredients

Crust and Streusel

Berry Filling

  • 1-1/2 cups fresh or frozen strawberries, diced into 1/4-inch cubes
  • 1-1/2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar, divided
  • 2 tablespoons cornstarch, divided
  • 1 tablespoon lemon juice, divided

Vanilla Glaze

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons 2% or skim milk

Instructions

Crust and Streusel

  • Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper. Set aside.
  • In a large bowl, combine oats, flour, brown sugar, baking powder, and salt. Toss in melted butter, yogurt, and vanilla until mixture is crumbly.
  • Reserve 3/4 cup of crumb mixture for topping. Press remaining mixture in prepared baking pan in an even layer. Set aside for a moment

Berry Filling

  • Place strawberries in a small bowl and the blueberries in a separate small ball. Top strawberries with 1/4 cup sugar, 1 tablespoon cornstarch, and 1/2 tablespoon lemon juice. Repeat with blueberries, adding remaining sugar, cornstarch, and lemon juice. Toss fruit well until evenly coated.
  • Arrange strawberry filling and blueberry filling in diagonal lines across crust. Top with reserved crumb topping.
  • Bake bars at 350F 40-45 minutes until topping is golden-brown and filling is bubbly. Allow bars to cool completely on a wire cooling rack.

Vanilla Glaze

  • In a small bowl, whisk sugar, vanilla, and just enough milk to achieve a drizzling consistency. Drizzle glaze over cooled bars and allow to set 10 minutes.
  • Lift bars from pan using parchment paper and cut into 9 even squares. Enjoy!
