Loaded with a double whammy of berries, lots of streusel, and a creamy vanilla glaze, these red white and blue bars are an easy, festive treat for the 4th of July!
Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper. Set aside.
In a large bowl, combine oats, flour, brown sugar, baking powder, and salt. Toss in melted butter, yogurt, and vanilla until mixture is crumbly.
Reserve 3/4 cup of crumb mixture for topping. Press remaining mixture in prepared baking pan in an even layer. Set aside for a moment
Berry Filling
Place strawberries in a small bowl and the blueberries in a separate small ball. Top strawberries with 1/4 cup sugar, 1 tablespoon cornstarch, and 1/2 tablespoon lemon juice. Repeat with blueberries, adding remaining sugar, cornstarch, and lemon juice. Toss fruit well until evenly coated.
Arrange strawberry filling and blueberry filling in diagonal lines across crust. Top with reserved crumb topping.
Bake bars at 350F 40-45 minutes until topping is golden-brown and filling is bubbly. Allow bars to cool completely on a wire cooling rack.
Vanilla Glaze
In a small bowl, whisk sugar, vanilla, and just enough milk to achieve a drizzling consistency. Drizzle glaze over cooled bars and allow to set 10 minutes.
Lift bars from pan using parchment paper and cut into 9 even squares. Enjoy!
