Not your average fruit bar here today! We’re in 4th of July mode and fully embracing the red white and blue eats.
Fresh blueberries, strawberries, and a sweet vanilla glaze have the colors all taken care of and it’s all wrapped up in a massive crumb bar. Dessert is served.
With no shortage of style either! You’ve just gotta go all out in the eats department on the 4th.

Hands down, the best part about this recipe is that the crust and the streusel are the same! No fussing around with multiple layers here today, these bars will only take about 15 minutes to assemble and then the oven takes care of the rest.

Ingredients You Will Need
- Oats
- All-purpose flour
- Brown sugar
- Baking powder
- Kosher salt
- Unsalted butter
- Greek yogurt
- Vanilla extract
- Blueberries
- Strawberries
- Lemon juice
- Granulated sugar
- Cornstarch
- Powdered sugar
- 2% or skim milk

Tips for Perfect Bars
- Reserve 3/4 cup crumb mixture for topping – the oatmeal crumb mixture acts as both the crust AND streusel topping to keep these bars extra easy.
- Arrange fruit filling in separate lines – this gives these bars a fun patriotic effect.
- Bake bars 40-45 minutes – you’ll know the bars are done when the berry filling is bubbly and the topping is golden brown.
- Allow bars to cool before slicing – for clean cuts, I recommend allowing bars to cool completely in pan before using parchment paper to remove and slice into squares.
Recipe Variations
Try these ideas for a different twist on these bars.
- Use another fruit – try raspberries or blackberries in place of the blueberries and strawberries.
- Add nuts – try adding 1/2 cup toasted chopped pecans or walnuts to the crust/topping.
- Flavor glaze – add 1 teaspoon orange or lemon zest to the glaze.
Storing and Freezing Bars
These bars store well in an airtight container at room temperature up to 4 days. You can also store the bars in refrigerator to extend their life by a few days.
To freeze bars, allow to cool completely, wrap well, and freeze up to 2 months. Thaw bars completely on countertop then top with powdered sugar glaze for serving.

Ingredients
Crust and Streusel
- 1 cup old-fashioned rolled oats
- 1-1/2 cups all-purpose flour
- 1/3 cup light brown sugar
- 3/4 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 6 tablespoons unsalted butter, melted
- 3 tablespoons plain Greek yogurt
- 1/2 teaspoon vanilla extract
Berry Filling
- 1-1/2 cups fresh or frozen strawberries, diced into 1/4-inch cubes
- 1-1/2 cups fresh or frozen blueberries
- 1/2 cup granulated sugar, divided
- 2 tablespoons cornstarch, divided
- 1 tablespoon lemon juice, divided
Vanilla Glaze
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons 2% or skim milk
Instructions
Crust and Streusel
- Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper. Set aside.
- In a large bowl, combine oats, flour, brown sugar, baking powder, and salt. Toss in melted butter, yogurt, and vanilla until mixture is crumbly.
- Reserve 3/4 cup of crumb mixture for topping. Press remaining mixture in prepared baking pan in an even layer. Set aside for a moment
Berry Filling
- Place strawberries in a small bowl and the blueberries in a separate small ball. Top strawberries with 1/4 cup sugar, 1 tablespoon cornstarch, and 1/2 tablespoon lemon juice. Repeat with blueberries, adding remaining sugar, cornstarch, and lemon juice. Toss fruit well until evenly coated.
- Arrange strawberry filling and blueberry filling in diagonal lines across crust. Top with reserved crumb topping.
- Bake bars at 350F 40-45 minutes until topping is golden-brown and filling is bubbly. Allow bars to cool completely on a wire cooling rack.
Vanilla Glaze
- In a small bowl, whisk sugar, vanilla, and just enough milk to achieve a drizzling consistency. Drizzle glaze over cooled bars and allow to set 10 minutes.
- Lift bars from pan using parchment paper and cut into 9 even squares. Enjoy!
